Rich Howard | immediately on strong notes of wine and wood, burnt caramel, charred embers, white and black pepper, seaweed and sea air. the unreduced palate is *brisk*, taking no taste bud prisoner. holding it in your mouth for a few moments leaves a wine-soaked cinder of wood sitting on your tongue. a few drops of water softens the nose, leaving heavily carmelized creme brulee with raspberry coulis, panna cotta, ripe plums, wet cigar box, cooked sausage, fresh moss, leather gloves. the palate has less bite now, but more flavor, if possible, with singed wood chips, lit cuban cigar, thick red berry reduction. this is simply amazing. |
